Every bowl on our menu is built the same way, in the same order, and once you can see the pattern you can build your own without thinking about it.
A base carries everything else: long grain rice, quinoa and cauliflower, spring mix, or a fifty-fifty of two. This is the decision that sets how heavy the bowl is.
A protein is the reason you are eating rather than snacking — charred chicken tikka, pulled lamb, beetroot gravlax salmon, ahi tuna, grilled shrimp ceviche, tofu curls, cottage cheese steak, chickpeas.
A sauce is what makes it a dish rather than an assembly. Most bowls that disappoint are bowls where this step was treated as optional.
Toppings add texture and colour, and garnishes add the crunch that survives the journey — crispy garlic, crunchy lentils, root vegetable chips, hemp hearts, nori crumble.
